Ingredients (serves 2):

5-6 celery sticks, sliced 
½ apple, deseeded, chopped 
⅓ cup (40g) walnuts, chopped 
2 tbsp. parsley, chopped 
¼ cup (25g) parmesan cheese, shaved 
2 tbsp. olive oil 
1 tbsp. apple cider vinegar 
salt and pepper 

Directions:

  1. Toss together the celery, apple, walnuts parmesan and parsley in a bowl. Drizzle with the olive oil and vinegar, then season with salt and pepper to taste. 

  2. Mix well, divide between 2 bowls and serve immediately.
