Ingredients (4 Servings):
3 tbsp Coconut Oil (melted)
2 large Sweet Potato (large, sliced into 1/4 inch slices)
1 1/2 tsps tapioca flour
1. Preheat oven to 425F and line baking sheet(s) with heavy tin foil. Grease with 1/3 of the coconut oil
2. Rinse and pat dry you sweet potato strips dry. Toss them into a bag or bowl with tapioca flour until well coated
3. Add the remaining coconut oil to the sweet potato strips and loss gently. Arrange the strips onto the baking sheet(s), be careful not to crowd the pan and bake 25 to 30 mins, flipping halfway through
4. Season with salt if desired, and let it cool slightly before serving. Enjoy!
